Chicken Stroganoff

Makes 4 Servings
Ingredients:
cooking spray
1 teaspoon crushed garlic
600g skinless chicken breast (cut into strips)
1 cup onion sliced
3 cups mushrooms sliced
2 small green pickles (finely chopped)
2 teaspoons low salt chicken stock powder
2 tablespoons no added salt tomato paste
1 tablespoon paprika
1 tablespoon corn starch
1 x 375ml can evaporated light milk
pepper to taste
Directions:
Coat a large non-stick frypan with cooking spray, add garlic and chicken strips, toss together until browned. Add onion to pan and cook 2 minutes, place mushrooms into pan and cook a further 2 minutes. Add gherkins, stock powder, tomato paste, paprika and stir well. Blend cornflour into milk, add to pan stirring continuously until sauce boils, pepper to taste.
